Bacon Wrapped Chicken Bites with Honey Mustard Glaze




Bacon is one of the best things ever. If it weren’t for bacon, chicken and turkey, I would likely be a vegetarian. Regardless, when I found a similar version of this recipe online, I knew I had to try it. They were amazing. If you’re looking for an appetizer for a party or special event, I would definitely recommend making these. Before you even begin, however, you may want to make sure you have enough ingredients for a double or triple batch because they go fast.

1 pound boneless, skinless chicken breasts
12 strips bacon
3 Tbsp. honey
3 tsp. brown mustard
1 Tbsp. lemon juice

Preheat oven to 425°. Slice the chicken breasts into 1/2 inch strips. Wrap each strip with bacon. You will likely be able to wrap more than one strip with one slice of bacon. Meanwhile, in a small bowl, combine the honey, mustard and lemon juice. Mix well. Place the bacon wrapped chicken in a baking dish or roasting tray or on a cookie sheet. Brush each one of the chicken bites with half the honey mustard glaze. Bake for 10-13 minutes. Remove from oven and turn the bites over. Brush with the remaining glaze. Put back in the oven and bake for another 10-13 minutes or until bacon is crispy.
