My mom found this recipe in some magazine and I thought it was delicious. I’m not gonna lie, I have a serious addiction to Stove Top stuffing. There have definitely been days when I would come home from work and just fix an entire box for dinner. So, needless to say, after a few seasoning tweaks, this serves a great spin on your typical Sunday chicken dinner … without a great deal of fuss.
1 lb. boneless, skinless chicken breasts, thawed and diced
1/4 cup onion, diced
2 tsp. paprika
2 tsp. garlic powder
1 tsp. poultry seasoning
1 - 16-oz. bag frozen mixed vegetables
1 - 10-3/4-oz. can cream of chicken soup
1 - 6-oz. box chicken stuffing mix, prepared
Preheat oven to 400°. Cook mixed vegetables for about 10 minutes until slightly tender. Meanwhile, in a 9-by-13-inch baking pan, combine the chicken with onion, paprika, garlic powder and poultry seasoning. Add the soup and vegetables and mix thoroughly. Spread the stuffing over top of the chicken mixture. Bake for 30 minutes or until chicken is cooked through.
