Chipper Bars
As much as I love Chipper Jones, these bars are not named after him; they are named as such due to the use of baking chips. Regardless of how they get their name, these bars are super easy to make and are utterly delicious. I mean, what’s not to love about chocolate and peanut butter? These also make for a great potluck dessert.
2 cups quick-cooking oats
1 cup flour
1 cup packed brown sugar
1/2 tsp. salt
1/2 tsp. baking soda
3/4 cup butter, softened
1 cup peanut butter chips
1 - 14-oz. can sweetened condensed milk
1 cup chocolate chips
Preheat oven to 350°. In a large bowl, combine the oats, flour, brown sugar, baking soda and salt. Cut in the butter with a pastry blender. Reserve 1-1/2 cups of the crumb mixture for topping and set aside. Press the remaining crumb mixture into the bottom of a greased 9-by-13-inch pan. In a small saucepan, heat and stir the peanut butter chips and sweetened condensed milk until smooth. Pour evenly over the crust. Sprinkle with chocolate chips. Pat reserved crumb mixture into filling. Bake for 25 to 35 minutes or until light golden brown. Cool completely; cut into bars.
