To be truthful, this Crock Pot recipe happened completely by accident. I was attempting to make chili when I realized that, instead of pouring a can of Chili Magic into the Crock Pot, I had poured in a can of Manwich. With the beans and sloppy joe mix already in the pot, I decided to see what happened when I added baked bean ingredients. The rest, as they say, is history … and this has turned into a favorite baked bean dish. Of course, since that oopsy, I’ve modified the recipe a bit to make it seem like less of an accident.
6 strips bacon, diced
1 medium onion, diced
1 - 15.5-ounce can pinto beans
1 - 15.5-ounce can Great Northern beans
1 - 15.5-ounce can kidney beans
1 - 15.5-ounce can Manwich Sloppy Joe mix
1 - 14.5-ounce can garlic, basil and oregano diced tomatoes
1/2 cup brown sugar
1/2 tsp. garlic powder
2 Tbsp. ketchup
1 Tbsp mustard
1-1/2 Tbsp. horseradish sauce
salt and pepper to taste
In a saucepan, cook the bacon with onion until crisp. Drain off the grease and transfer to 5-quart Crock Pot. Add the remaining ingredients and stir. Cook on high four hours, then on low setting for two more hours until beans are fully cooked. Serve with your favorite barbecued meat or as a side for your favorite entree.
