S'more Bars
While I don't do much camping, I am very fond of s'mores. Also because I hate cleaning up the mess they leave behind when they're made in the microwave, I was more than willing to give this recipe a try. And while I didn't know if the bars were going to taste very much like the real thing, I was delighted to find out that they actually did. Sure, you don't get the campfire air or the toasted marshmallows, but in the dead of winter, this is about as close ... and as good as it's going to get.
1 cup butter, softened
1-1/2 cups sugar
2 eggs
2 tsp. vanilla
2-2/3 cups flour
1-1/2 cups graham cracker crumbs (about 11 whole blocks)
2 tsp. baking powder
1/4 tsp. salt
5 - 1.55 oz. chocolate bars, quartered
4 cups marshmallows
4 Tbsp. butter
Preheat oven to 350°. In a large bowl, cream softened butter and sugar until light and fluffy. Add egg and vanilla; beat well. In another bowl, combine the flour, graham cracker crumbs, baking powder and salt. Gradually add the dry mixture to the creamed mixture. Set aside 1 cup for topping. Press the remaining mixture into a greased 9-by-13 baking pan. Place the candy bar pieces evenly over crust. In a dutch oven, melt the remaining 4 Tbsp. of butter. Add the marshmallows and remove from heat. Stir until melted. Immediately pour the marshmallow mixture over the candy bar layer. Crumble remaining graham cracker mixture over the top. Bake at 350° for 25-30 minutes or until golden brown. Cool before cutting. Cut into bars and serve. Store in an airtight container.
