BLT Pasta Salad
Who says BLTs are only good on toasted bread? Certainly not me. The sandwiches are amazing, the soup is unbelievably good and this cold pasta salad is one of my all-time summer favorites. While this recipe came from a Schwan's booklet using their special bagged pasta and vegetable blend and bacon slices, I altered it for those who can't afford to spend extra money on Schwan's products. And it turned out great ... an instant pasta salad favorite among the whole family.
2 cups dry pasta (shells, rotini, elbow macaroni)
2 cups mayonnaise or salad dressing
1 packet ranch dressing mix
1/2 cup frozen peas, thawed (or 1- 15 oz. can, drained)
1/2 cup frozen corn, thawed (or 1- 15 oz. can, drained)
10 slices bacon, cooked and chopped
1/2 cup onion, diced
2 medium tomatoes, chopped
2 cups lettuce, chopped
Cook pasta, drain and chill. In a medium saucepan, boil vegetables until tender, drain and chill. In a large bowl, combine ranch dressing mix and mayonnaise. Stir in the onions. Add the bacon, pasta, corn, peas, tomatoes and lettuce. Refrigerate until ready to serve.
