Egg Salad

Growing up, I always awaited the day when my mom would make egg salad for sandwiches. And, for the most part, it was a simple recipe - eggs, salad dressing, salt and pepper. I absolutely loved it. But when I started working at Stacker Cafe back when I was in high school, I was exposed to a different kind of egg salad. Needless to say, I haven't really found a better-tasting recipe for one of my favorite sandwiches.

6 hard-boiled eggs
1/2 cup celery, finely chopped
1/4 cup onion, minced
1/3 cup mayonaisse
1/4 tsp. salt
dash pepper

Peel and chop the eggs. Add the celery and onion. Mix in the mayo until well blended. Add the salt and pepper (more if you desire) and stir. Enjoy on your favorite bread.
